TastyTeff Banana Raisin Bread

  • 1 ¾ cups TastyTeff flour

  • 1 cup seedless raisins

  • ½ cup chopped dates

  • ½ cup chopped walnuts

  • 1 teaspoon ground cinnamon

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • ½ cup butter, softened

  • 1 cup white sugar

  • 1 cup mashed banana

  • 1 large egg, whisked

  • 1 teaspoon vanilla extract


  1. Preheat the oven to 350°F and grease a 9-inch loaf pan with cooking spray.

  2. Toss the raisins, chopped dates, and walnuts with a few tablespoons of the TastyTeff flour then set aside.

  3. Combine the remaining TastyTeff flour with the cinnamon, baking soda, baking powder, and salt in a medium bowl.

  4. In a separate bowl, cream together the butter and sugar until light and fluffy.

  5. Blend in the banana, egg, and vanilla extract until well combined.

  6. Add the wet ingredients to the dry and stir well then fold in the dried fruit and nuts.

  7. Spoon the batter into the prepared pan and bake for 40 to 45 minutes until a knife inserted in the center comes out clean.

  8. Cool in the pan for 10 minutes then turn out onto a wire rack to cool completely.
